Spanish buffet

My husb saw the ad in Star Paper of Malaysia 1st time Spanish Buffet which charged only RM34++ after 20% discount.The original price is RM49.90. So we went for a dinner tonight, the restaurant called La Gomera located at Bandar Damansara Perdana. I noticed the buffet style almost the same like at Jogoya. They serve variety seafoods, mini pizza, pasta, paella seafood platter, dessert and etc. The quality is not bad, it is worth to pay for it.

Pasta with mushroom sauce


I used to have an indian rice for lunch at cafe in our condo before i pick her from nursery. I didn't feel like going to cafe again today. And i know that i have to finish the Stromboli mushroom sauce which will be expired soon. And i got one tin of colourful pasta which have been kept in the cabinet for few years :oP don't worry still in good condition....still can eat. My mother in law bought me the pasta from Italy..can't remember since when. So i cooked it with mushroom sauce with the smoked back bacon..very yummy.

Shanghai mooncake again



This is the correct version of mooncake with the size and measurement that given by my friend Christine. The previous post of Shanghai mooncake that i bake was no instruction and i just simply played around with it. I got the recipe from the bakery shop but there is no step by step on how to bake it and i didn't know that we have to weigh the filling and skin differently. :o( ..

Shanghai mooncake



I can't wait to taste it so i cut when it is hot.

Last year I made Bing pei (Crystal) mooncake but it was failed as it was hard on the next day. I guessed the reason being of i knead the dough for too long.Emm..Should i say i did not used hand to knead as i don't like the sticky part so i used breadmaker :OP This year I try out Shanghai mooncake as some people said Shanghai mooncake very easy to bake like a cookies. I always like the red bean filling with kuaci in the mooncake. 

Here is the recipe:
280gm Flour (Sifted)
50gm Milk powder
25gm Custard powder
1 1/2tsp baking powder 
100gm Icing sugar
100gm Shortening
50gm Margarine
2 eggs

- Cream butter and icing sugar until light and fluffy
- Add eggs and mix well
- Add Shortening and mix well
- Add in Milk powder and Custard powder till combine
- Fold in sifted flour and baking powder and mix to form dough
- Divide dough into small portions and form into balls
- Wrap it with red bean past filling.
- Arrange onto a lined baking tray and glaze with beaten egg yolk
- Bake in a preheated oven at 180C for 25-30mins

Trip to Cameron Highland

After my last trip since 2003 or 2004 i never been to Cameron Highland for almost 6 yrs. I remember my last trip to Cameron was for Treasure Hunt. After i gave birth to my son last yr, i always wanted to go for a trip. Finally, i make it hehehe we decided to bring my daugh to Cameron on the 1st day of school holiday so we went on last sat. Maybe we are "kiasi" of people crowded or jam every way especially during school holiday plus raya time. Thank god, the roads are clear. My husb worried of my daugh will get car sick but i told him it was not her it was me i think cos i pening kepala already. hehehe..

There are a lots of building and shop-lots being developed. I remember last time i went there no Starbuck but now got already woh. I remember also there was no shop-lots beside Equatorial Hotel but now i saw few rows there. I remember the pasar malam at Brinchang was small but now they moved to another side and occupied at part of the road side.

Upon check out, we went to strawberry farm as Sue-Ann wanted to self pluck strawberry. We plucked 100gm of strawberries just cost RM10.

I was so tired as i have to walked up to the top of the hill at tea plantation. Moreover i seldom exercise. You know what, i wore skirt some more..Aiyo..

Bacon and Cheese Rolls

I bake these buns few months ago. I use the water roux method. This was my 2nd attempt and it was successful after 1st time failure. After this round  i try to used water roux again but it failed. I think it depends on that lucky day. :o) I saw the water roux method from Angie's recipes but i followed Kitchen Corner's blog recipe for this time. 

Recipe
195g bread flour
90g plain flour
12g milk powder
30g castor sugar
6g salt
6g yeast
60g beaten eggs
65g water
75g water roux
45g unsalted butter
some cheddar cheese
some bacons

Recipe for the water roux
Cook 250g water with 50g bread flour at medium low heat, keep stirring until it become thicken and no lumps left. If you've a candy thermometer, measure it until the temperature turn to 65C then turn off the heat. I didnt measure it with thermometer, i cook it until like a baby porridge. Transfer to a clean bowl and cover with a cling wrao to avoid skin forming. The amount of water dough here would be more than a recipe required, you should store it in the fridge for 2 days.

- Put all the buns ingredients for kneading until smooth and elastic and the dough no more sticking at the side of the mixing bowl. Let it proof for 40mins in a clean bowl cover with cling wrap
- Flatten the dough, put the filling of bacons and cheese. Roll it and cut into pieces, proof for 30mins.
- Bake 180C for 25mins



Choc Chip with Cornflakes Cookie





I bake this cookies last few months. I decided to post this pic and would like to share the to those cookies lover. I got the recipe from my SG ex-colleague. I remember after a bite of the cookie i love it so much and asked for the recipe. I bake this cookies for few times and received lots of compliment. I gave some to my Arabian neighbour, the next day she asked for the recipe. :oP.. Don't look at the pic like this but it tasted really good and crunchy. But cannot compare to Famous Amos lah :o).

Ingredients A
150g butter
150g castor sugar

1 egg
1tsp vanilla essence

Sifted ingredients
1 1/2 cups self raising flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

Ingredients B
100g dark cooking chocolate, chopped (optional)
1 cup chocolate chips
2 cups kellogg's cornflakes, crushed
1 cup almond nibs or chopped almonds (i toasted it as it smell more fragrant)

- Cream ingredients A till light and fluffy 
- Add egg and vanilla essence, beat to combine
- Fold in sifted ingredients
- Add in ingredients B and mix to form dough
- Cover mixing bowl with cling-wrap and place in fridge overnight 
- Let dough thaw out slightly before baking
- Scoop little chunks onto baking tray lined with baking/greaseproof paper (don't flatten)
- Bake in preheated over at 175 degrees Celcius for about 15mins (cookies should be golden brown)

Choc Chip & Raisin Bun



Which buns more bigger left or right?



I decided to bake buns today as a snack for our trip to Cameron tomorrow. I bought the raisin buns (plastic) from Bread Story yesterday which charged us RM4.50 for 4pcs, Quite expensive though. The recipe that i bake is without bread improver which i think much more healthier. I used the Hokkaido Milky Loaf recipe, can't remember copied from which website. I used breadmaker to knead a dough and this time i let the dough proof for 45mins and went for a nap with my daugh. Then i remove dough and give a few kneading to press out the trapped air . I divided 10 portions and rest for 30mins. You see the buns look fluffy and soft. 

Recipe:
- Low fat milk (warm) 150ml
- 1 egg
- Salt 1/2 tsp
- Unsalted butter 35gm or 2tbs
- Milk powder 1tbsp
- High protein flour 250gm
- Castor sugar 25gm or 2 1/2 tbs
- Dry yeast 4g or 2 1/2tsp

Bake at 180C at 20mins

Apricot Yogurt Cake





I saw Wendy's blog posted the Apricot cake which made with yogurt. This recipe is quite easy but i think i measured the amount of yogurt wrongly which maybe caused of the bottom of the cake not cook. The top part of the cake taste good and yummy. Thanks to my little helper, she always exciting whenever see i'm baking because she wants to take part too. Did you realize the little boy standing near the door? Thanks to my neighbour's maid that distracting him if not he will sure wanted to take part too. :O)

ABC soup with celery

My son has been sick for a week. We didn't go out anywhere on Merdeka Day. I didn't cook ABC soup for sometimes, I decided to cook it on that day which is one of my daugh's favourite soup. Besides carrot, potato, tomato, this time i added celery with frozen Japanese scallop. One more thing i almost forgot is dry cuttlefish, i added it later. Maybe i did not cook it regularly that's why tend to forgot the ingredients that needed for the soup.

I always have to think about the dish that come out with gravy for my daugh. This time i cook chicken with potato. I'm not very good to give the measurement for the recipe like other bloggers did. I just assume the amount of the ingredients that needed. I'm trying to provide simple and summarize recipe here :oP

Recipe :
- Fry potato until it turns light brown. Set aside
- Marinate chicken with soy sauce and dark soy sauce for about half an hour
- Put chopped garlic and slice ginger in wok. Stir until golden brown then add in chicken. Stir chicken until it turn brown then add potato. 
- Add water to cover chicken for simmer. Put soy sauce, dark soy sauce, dash of sugar (depends on your taste). 




Quick and Simple Lunch

Every weekend is my busy day, i'm trying to cook for my kids as quick and simple as possible as now my son is growing up and likes to walk around which need to pay more attention to him. Not easy huh, quite tiring. I only got time to cook and bath my daugh during his nap time.

For his meal which is quite simple, just a porridge but still have to think of the ingredients.
For her meal, i'm trying to steam everything if possible before he wake up. 

I like this steamer a lot because i don't have to check the water level every time when i steam if i use gas. I put rice in the bottom tray and meat in the upper tray. 

Simple recipe:
Marinate minced meat with soya sauce, sesame oil, pepper and cornflour. Sauce will be 2tbsp plus water. Steam about half an hour.
