Choc Chip, cornflakes with macadamia cookies

I have been baking this cookies every year. Yesterday, while the part time maid doing the housekeeping i bake another batch of pineapple cookies. At the same time i had prepared this choc chip cookies dough kept in the fridge for overnight and bake it today. The cookies turned out sooooooo crunchy. I used the previous recipe from Choc chip with cornflakes cookies. This time i replaced almond nib to macadamia nuts. This is the FINAL cookies for CNY.

Prawn Crackers (AGAIN)

I fried prawn crackers again for my mother in law. This time is bigger size until cannot fit the basin which i have to used 2.


After eating too many fried stuff, i think of cooling "Guai Lin Gao". I got 2 packets left in the fridge and decided to boil it. I gave some bowls to my son's nanny and my neighbour. Very "laku" maybe lots of people is getting heaty :o)

Fried Arrowhead Chips

This is my first attempt of frying "Nga Ku". This year of CNY, i suddenly have a mood to fry crackers "har bian" and "nga ku". Emmm... i think i gotta give up not going to do it again next year as i found that the process of peeling and slicing part of Nga Ku are wasting of time. Perhaps, my slice blade not sharp enough which i had to used knife to cut it thinly. Secondly, I gotta re-fry again some of the thick Nga Ku as it is not crunchy but still taste nice. Unlike what i refer to Wendy's blog, her Nga Ku nicely cut and fried. :o(

I guessed i didn't fry until the bubbles totally gone and the heat might be high. One more thing, i think PATIENT quite important which i don't have. :oP

Pineapple Cookies

When i looked at blogger posted their picture, i feel hesitate to post mine. Must really grab one camera, cannot use handphone anymore :oP.

I always like to buy the pineapple mix flour and jam from this bakery shop at Taman Pertama. It was so easy as i just need to add butter, egg yolks and vanilla essence with the flour that it is. The pineapple jam suit my taste as it is homemade. The cookies really melted in my mouth. I know the egg wash part quite messy cos i was in a hurry to pick up my son :oP.


Can you see the middle one, i i missed out that part for glazing.

Prawn Crackers

I like to eat prawn crackers or fried and crispy stuff. I bought the raw crackers from wet market. The smaller pieces sell RM15 and bigger one RM20. This is my first time to fried prawn crackers especially for this year CNY. For the past CNY, my mom in law will fried the crackers for me but this time i will do for her as she has not been well since last two weeks. Now i know it is not easy stand near the hot wok and fry those stuff.
My daugh complaint that i smell like McD, actually she was not well and was lying on the mattress. I quickly went to take shower :oP


Cranberry & Oat Cookies

After I saw the bloggers posted the nice picture on their blog, i think i should invest a new camera. I've been using handphone to take picture all the while and some of it quite blur :oP.

I'm submitting this Cranberry & Oat Cookies recipe to Aspiring Bakers #3 My Favourite CNY Cookies from Jess's Kitchen blog.

I followed the recipe from the book "I Love Tasty and Healthy Treats"  by Alan Kok. I never taste Cranberry before and this is my first time to bake with cranberry. I like the cranberry taste, it is not so sweet and taste little bit of sour.




Ingredients:
160gm butter
80gm icing sugar
1/2 egg
150gm plain flour, mixed with,
1/2 tsp baking powder
50gm dried cranberries
50gm chocolate chips
150gm rolled oats
50gm walnuts, coarsely chopped (i toasted it)

Method:
1. Preheat oven to 160C. Line a baking tray with grease proof paper
2.Cream butter and icing sugar until light and fluffy. Add egg and stir well, Add in the remaining ingredients and mix into a dough.
3. Divide the dough into small portions and arrange onto the lined baking tray. Use a fork to press lightly.
4. Bake in the preheated oven for 15-20 mins or until cooked. ( i bake 30mins due to my small oven).
Remove and leave for cool before serving.

Walnut Cheesy Cookies

I'm submitting this recipe to Aspiring Bakers #3 My Favourite CNY Cookies from Jess's Kitchen Blog.

I used this recipe from " The First Book of Baking  for Beginners by Carol. The original name in chinese is Snow Walnut. I did not sprinkle icing sugar on top of the cookies so no Snow :o)



Ingredients"
70gm Unsalted butter (room temperature)
25gm Icing sugar
1 Egg yolk
20gm Parmesan cheese (I used Cheddar Cheese)
15gm Almond powder
100gm Cake flour
30gm Walnut (Bake 150C for 7-8mins and break it into small pieces)

Method:
1. Cut butter into smaller pieces and beat until light.
2. Add sugar into butter and beat until fluffy
3. Add egg yolk twice into batter and mix well
4. Put parmesan cheese and almond powder into batter and mix well
5. Add sifted flour twice into batter until well corporated
6. Lastly put roasted walnut into batter and mix well
7. Take a small amount of walnut dough and roll it into a small ball. If the weather is too hot, keep the dough into fridge for 30mins
8. Take out the dough and bake under preheated 160C for 20-22mins (Depends on individual's oven). I bake 160C for 25-20mins
9. You can sprinkle some icing sugar on the cookies before you eat.

CNY Almond Slice Cookies

I'm submitting this recipe to Aspiring Bakers #3 My Favourite CNY Cookies

I have been wanted to bake quite some times but quite busy lately. I have book mark some recipe but when i want to bake that time lack of ingredient at home and i lazy to go out and buy so have been delayed till now. Today I was on emergency leave, i grab an hour to bake this cookies while my gal is having a nap.

I got the recipe from this book "The First Book of Baking for Beginners" by Carol with step by step provided. I will try to translate the recipe to English version as i don't know the "chinese pin yin".








Ingredients:
2 Egg whites
50gm Castor sugar (I found it too sweet, shall reduce)
1/8tsp Salt
40gm Cake flour (Sift)
25gm Unsalted butter (Melted)
100gm Almond Slices

Method:
1. Add castor sugar, salt into egg whites until mixed well together.
2. Add sifted flour into batter (1) and mixed well
3. Pour in melted butter into batter (2)
4. Lastly, add the almond slices into batter (3) and fold gently in order not to break the almonds
5. Wrap the batter with cling wrap and keep in the fridge for 30 mins
6. Take out the batter from fridge, use big spoon to scoop the batter and place it into baking tray. Make sure the batter is far away from each other.
7. Dip some water into your fingers tip (wet fingers easy to workout on the batter smoothly) and drag the batter on the baking tray to a larger pieces.
8. Preheated 150C and bake for 12mins. Once the cookies turn brown, reduce the temp to 130C and bake again for 6-7mins until golden brown (Depends on your oven temperature). I have a small oven so my baking time take longer.

I noticed that now people sell cookies for RM25 for small bottle and RM35 for big one which is quite expensive. I've been started to bake my own CNY cookies last year.



My gal has been getting high fever since last sunday. Being a parent must really have a good energy and spirit to take care of sick kids otherwise they were too collapse easily. I have been taking emergency leave on Mon and today as well. I have to monitor my gal fever's temperature as her fever reached till 39C last 3 days.

I felt hungry yesterday after lunch don't know why maybe being tiredness. I finished the sneaker and i got white gardenia bread but i don't like to apply with jam. I toasted it with butter and sugar on top.



Nice pork trotter

My hubby brought me to this restaurant at Jalan Pudu Ulu, Cheras. We had a nice pork trotter and little bit spicy of "kai lan" vege. One dish served for 2 persons quite big portion.And free with old cucumber soup. I feel hungry when i look at this pic.
