Apple with bittergourd juice

I feel so heaty and dizzy these few days maybe because of the weather or not enough rest. I try to control myself not to drink so much of soft drinks. In my fridge got diet coke, pepsi light and soda water. I'm actually so tempting to drink it. At last i make up my mind to make apple juice with small bittergourd which leftover in the fridge for few weeks. It is so refreshing.

Oil less Pandan Chiffon Cake

Oops..should remove the price tag. hehe..

The top part burned cos it touched to the ceiling of the oven.

This cake smell fragrant maybe from the pandan leaves or the coconut milk. It tasted good but a bit sweet for me although I've reduced the amount of sugar from yolk's part. I will reduce the sugar again if i bake next time. And a bit wet also, the texture not similar like the original recipe from wendy. I think i need to practice more :o)

Mango Yogurt Pudding Cake

I do not fancy cheese cake. I like this type of pudding cake. The original recipe was from happyhomebaking

I used Marie biscuit as a base instead of Oreo cookies from original recipe. The cake tasted refreshing. But the only thing i did not enjoy is the process of cutting mango chunks maybe i'm lazy :oP

Japanese Cotton Sponge Cake

My ex-col/si-fu Yus asked for the recipe of this cake. She might be kidding cos she is a good baker and good cook. I used to call her si-fu whenever i need her advice on baking trick. I was happy also cos she asked for recipe woh..hehehe..

Ingredients:

60g Butter, melted
80g Plain Flour
80ml Evaporated Milk (I used fresh milk)
1 Egg
5 Egg Yolks
5 Egg Whites
120g Sugar
Pinch of Salt

How to do it:

Add butter and flour together.
Mix till well blended.
Add milk and mix till will combined.
Add the 1 egg and 5 egg yolks till will blended.
In a separate bowl, whisk egg whites till foamy.
Add in sugar and salt and whisk till stiff (takes about 20 minutes)
Using a spatula fold in the egg whites with the egg yolk mixture till well incorporated.
Pour mixture onto the swiss roll pan (15 x 10 x ¼ inches) fully lined with paper.

Bake at 170C on the middle rack for 25 minutes.

Remove the mould immediately when it baked. Set aside to cool.

Note:
When whisking egg white, make sure your tools, bowls are clean and dry. Egg white MUST NOT contain a single drop of egg yolk. If not under these said conditions, your egg white will not peak.

Arabic Food

I thought i can rest today while a part time maid doing the house chores..Out of sudden, my neighbour knocked the door and asked if i'm interested to learn to cook Arabic rice chicken. I only got few hours left cos have to pick up my daughter from nursery and i don't want to turn her down cos she had been offered me few times.

Emmm..actually very lazy today..If i want to cook or bake anything must see my mood. The chicken rice taste very good almost similar like Nasi Beriani but this version is much more healthier less oily. But a lots of different spices required and some are from Arab...dunno where to get so she gave me some of the spices.

Stewing half chicken about 2hrs

The final part cook with Basmati rice. The butter in the aluminium foil together with the black stone (no pic here is like charcoal) to fragrant the entire rice.

Chicken rice serve with pickled chilly (sourly and salty)

My neighbour so good, she make yogurt salad for me. The recipe : Plain yogurt (no sugar), cucumber, garlic, crush pepper and dash of salt. So easy and healthy too.
