Bite-size Parmesan Cheese Bread





I made these mini bread few batches already. My kids love it so much maybe due to the mini size and parmesan taste. My son took few bites in one go. My daughter always request for this mini breads.

The recipe was adapted from Min's blog

  • High Protein Flour 200g
  • Instant yeast 1/3tsp
  • Castor sugar 30g
  • Egg 1
  • Salt 1/8tsp
  • Parmesan Cheese powder 1Tbsp
  • Milk 80g
  • Unsalted butter 30g (cut into cube and cool down to room temperature)
  1. Mix all the dry ingredients except butter till well-blended.
  2. Add in the liquids (egg and milk) and knead to form a rough dough.
  3. Add in butter cubes and knead to form elastic dough.
  4. Let it proof for 60 minutes or till double its size.
  5. Punch down the dough to release air and let it rest for another 15 minutes.
  6. Flatten the dough and roll it into 1cm thick rectangular shape.
  7. Using a sharp knife, cut the dough into 2cm x 2cm square pieces.
  8. Arrange them into baking tray and let them proof for another 30 minutes.
  9. Bake in preheated oven at 180'C for 12-14 minutes.

Oreo Buns


Another buns that i make today, the recipe is from Nasilemaklover's blog. The topping perhaps doesn't looks good as my presentation is not good. I kept the oreo biscuits quite sometimes thought of make cheesecake but end up until i seen this easy buns with oreo's recipe.

Japanese Cream Buns


I saw this Japanese Cream Bun's recipe from Frozenwing's.blog long time ago and thought of make it one day but have been delayed and delayed due to my lazy worms. Lately, i thought of make some breads since i'm so free at home but can't decide what to make until i've seen Wendy's.blog posted the Japanese Cream Bun. So ok lah i'm going to try it out with the new method. I think it is called gelatinised method if i'm not wrong. 

My kids ate 2 buns after dinner maybe just fresh from the oven, taste nicer. But the buns was moist on the next day, i'm not sure what's the causes. Wendy and Frozen Wing's buns look fluffy. I guessed maybe due to the kneading problem or maybe i gotta do more practice cos i didn't bake quite sometimes.

I think i might have a reading problem which i didn't always follow or read the method from recipes properly. For eg: 
1.for this recipe, i dumped all ingredients in the breadmaker maybe caused of moist. (just my guessing). I didnt followed the steps.
2.I cooked yogurt in tikka massala chicken which the yogurt was supposed to put on top of curry chicken and not cooked together. :o(. Not satisfied, will cook again and share pic in next round
2.Just make the Oreo buns, the recipe for topping is added the sugar paste with oreo biscuits but my sugar paste was in dustbin..oh dear, am i dreaming. 

I guessed my brain is to blank staying at home cannot function at all compared when i worked that time.

Cheese Bread Sticks

Bread again. My bread flour had been expired for 2 weeks, for me i will throw it away if anything that had expired but according to the bakery shop, they said although the flour have been expired we still can use it. My husband also said that. I checked out the bread flour still in good condition so i used it for Cheese Bread Sticks.

Buns

I didnt bake buns for quite sometimes. The buns look nice in this pic but it turned hard on the next day. It was soft and nice to eat when it's hot. I'm not sure what's went wrong maybe due to lack of practice for sometimes and i had dizzyness that day.  So dissapointed.. But my husb still can finished the hard hot dog buns on the next day.  :O(.

I felt better after few drinks of "Hor yan hor" (herbal tea) to relieved the dizzyness and i continue to grilled chicken wings for the dinner. :O) ..I can't find the recipe for grilled chicken wings cos was so dizzy that day. I just simply marinated the chicken wings with soy sauce, dark soy sauce and a bit of honey for 3hours.
When it grilled half way i applied some honey front and back of the chicken wings.

Easy Brazilian Cheese Bread

I bake the Brazilian Cheese Bread last few weeks ago. The recipe adapted from Simply Recipes. It was really easy as just mixed all the ingredients and blend it. The bread texture similar like Japanese mochi.

Choc & Raisin buns

I bake some raisin buns again. I used the recipe from Choc chip raisin bun. I added about 1tsp of choc powder (maybe you can add more). This time i did not put choc chip.

My gal has been getting high fever since last sunday. Being a parent must really have a good energy and spirit to take care of sick kids otherwise they were too collapse easily. I have been taking emergency leave on Mon and today as well. I have to monitor my gal fever's temperature as her fever reached till 39C last 3 days.

I felt hungry yesterday after lunch don't know why maybe being tiredness. I finished the sneaker and i got white gardenia bread but i don't like to apply with jam. I toasted it with butter and sugar on top.

Bacon Rolls



I actually plan to bring my daugh to hair salon but she doesn't want to go as she wanted to go to babysitter house to play with jie jie. I'm quite free after sent my kids to babysitter so i find something to bake. I saw the Bacon and Onion Bread posted by Dailydelicious which is so tempting. Bacon is my favourite anyway. I did not follow her bread's recipe except bacon fillings, i used my own Bread's recipe. Actually i wanted to bake a smaller size similar as Dailydelicious but it turned out double size. I did not follow her measurement as i just simply roll it. The buns very fluffy and super soft.

Nutella with walnut and raisin rolls

I'm addicted to nutella recently. After I bake the nutella with walnuts and raisin rolls last week. I felt like not enough, every night thinking of it :op. Today I bake these rolls again..Sigh! actually i should watch out my diet but seems couldn't resist it. Now every night must munch something.

Buns

 I noticed that my husb did not have his breakfast this few days although i had told him that there are some baguette in the freezer which he needs to toast it maybe he was lazy to do it. He used to have some bread for breakfast before he left to work. 

Since I'm off today to take care my daugh. I decided to bake some buns or rolls so he can have it for  breakfast tomorrow. I gotta finish the low fat milk which had kept in the fridge for some time. I used my previous recipe Choc-chip-raisin-bun. I bake few hot dog buns and i reserved another portion of dough for rolls. Initially, I thought of bake Cinnamon rolls but afraid that my family does not like the cinnamon taste. So I decided to spread the Nutella jam on the dough and add some raisins and walnuts on it for the filling. It tasted delicious I like the chocolate taste and got walnut to chew.

Bacon and Cheese Rolls

I bake these buns few months ago. I use the water roux method. This was my 2nd attempt and it was successful after 1st time failure. After this round  i try to used water roux again but it failed. I think it depends on that lucky day. :o) I saw the water roux method from Angie's recipes but i followed Kitchen Corner's blog recipe for this time. 

Recipe
195g bread flour
90g plain flour
12g milk powder
30g castor sugar
6g salt
6g yeast
60g beaten eggs
65g water
75g water roux
45g unsalted butter
some cheddar cheese
some bacons

Recipe for the water roux
Cook 250g water with 50g bread flour at medium low heat, keep stirring until it become thicken and no lumps left. If you've a candy thermometer, measure it until the temperature turn to 65C then turn off the heat. I didnt measure it with thermometer, i cook it until like a baby porridge. Transfer to a clean bowl and cover with a cling wrao to avoid skin forming. The amount of water dough here would be more than a recipe required, you should store it in the fridge for 2 days.

- Put all the buns ingredients for kneading until smooth and elastic and the dough no more sticking at the side of the mixing bowl. Let it proof for 40mins in a clean bowl cover with cling wrap
- Flatten the dough, put the filling of bacons and cheese. Roll it and cut into pieces, proof for 30mins.
- Bake 180C for 25mins

Choc Chip & Raisin Bun



Which buns more bigger left or right?



I decided to bake buns today as a snack for our trip to Cameron tomorrow. I bought the raisin buns (plastic) from Bread Story yesterday which charged us RM4.50 for 4pcs, Quite expensive though. The recipe that i bake is without bread improver which i think much more healthier. I used the Hokkaido Milky Loaf recipe, can't remember copied from which website. I used breadmaker to knead a dough and this time i let the dough proof for 45mins and went for a nap with my daugh. Then i remove dough and give a few kneading to press out the trapped air . I divided 10 portions and rest for 30mins. You see the buns look fluffy and soft. 

Recipe:
- Low fat milk (warm) 150ml
- 1 egg
- Salt 1/2 tsp
- Unsalted butter 35gm or 2tbs
- Milk powder 1tbsp
- High protein flour 250gm
- Castor sugar 25gm or 2 1/2 tbs
- Dry yeast 4g or 2 1/2tsp

Bake at 180C at 20mins
