Orange muffin without butter

I think i have been crazy of baking and cooking lately. I have the habit whenever i read the favourite recipe, i will go and buy the ingredients but after that i did not make it and store it for sometime. I got the yogurt  in the fridge and thought of bake the cake but not this one. Now i can't remember which recipe that i have bookmarked. Last few days i saw Anncoojournal's blog posted the orange muffin with yogurt. So this is the time i should finished the yogurt..:O).

The verdict for this muffin is spongy but a bit sweet for me. It depends on the individual taste bud. I should reduce the sugar next round. I'm happy as i beated the egg whites in peak form successfully which im not always that lucky..

Moist Chocolate Muffin

Just a short post, my son loves chocolate which i had promised to bake chocolate muffin one day. I used the premix muffin bought from bakery ingredient store. I always buy this premix muffin which is moist and not so sweet as well as the chocolate was imported. It is simply easy just add butter/oil, water and eggs. Save time from weighing flours, sugar and etc with the premix muffin flour.

Steamed Moist Chocolate Cake

I realised that past few weeks i have been trying out some new recipes which has been sitting in my baking/cooking list for sometimes. At least i had completed my few mission. Last few days when i got the mood to bake some cake, the cakes turned out disaster. This morning, I make a cake again but not bake this time is in steam method. This recipe have been in my baking list long long time. I saw this recipe from Janechew's blog, there is no egg white beaten required which i'm not very good of. It is just simply mixed around and steamed just that easy. The cake turned out so soft and chocolaty so moist. Love it. I packed some for my daughter's teacher at concert tomorrow.

Mini Dark Chocolate Muffin

I'm back again. I just spent a little time to bake simple and easy muffin today. I wanted to try to make some buns after seen Wendy's blog which she used pre-fermented dough method. I even had bought the flour but just no time to do it as i have been busy with my new job, after work have to take care of kids and cleaning stuff. I'm so missed my part timer housewife last time. :o(.

Here is my simple recipe;
500gm Ezy chocolate muffin mix
3nos Eggs
100gm Water
200gm Vegetable Oil (I replaced with butter)

Method:
1. Mix Chocolate muffin mix and eggs with beater for 1minute slow speed and 3mins medium speed.
2. Add water, vegetable oil over 1 min on slow speed. Scape down, then mix for 3mins on slow speed until the mix is smooth.
3.Add filling as required (I added raisins and chocolate chips)
4. Bake at 180C for 25mins

Cocoa butter cake

I have been craving for choc cake  last few weeks until last sat i decided to bake a cocoa butter cake. I got the recipe from Nasilemaklover's blog. I love to read her blog with full of nasi lemak recipes. I have been bookmarked some recipes just to wait for my time to get ready to do it. The cake smell very nice with the light coffee aroma. I have to bake for 40-45mins maybe due to my small oven instead of 30mins from the original recipe.

Japanese Cotton Cheesecake

I have been bookmarked this recipe from few bloggers and again i don't have confidence to bake cake or i should said i did not get the clear picture for Eg: how's the water bath work for this recipe. Until I read Sonia's blog about the Tips & Tricks from Ju. Thanks for both sharing.

I doubt my ability when double boiled the cheese cream and whipping egg white. When the egg white reached soft peak i have to triple confirm and referred to my printed copy of picture for the egg white whipping.

The cake rose in the beginning during baking. When I leave it to cool in oven with door ajar, the cake was sink down slightly. Thank god it was just slightly. My daughter and i love this cake so much. My daughter said "wants to bring some to school tomorrow and also bring some during the school trip next week". Well! I love it very much as it tasted like "kai tan koh" (steamed egg cake) with mild cheese.

Steamed Egg Cake

I have been bookmarked this recipe for some times as not ready to make it. Maybe i don't have confident to making any cake cos not very good on it. Steamed Egg Cake (Kai Tan Koh) is my childhood favourite cake. I will definitely buy this cake from pasar malam.

Yesterday, i saw my friend posted her Cocoa Steamed Egg Cake in Facebook which was inspired me to make it on the next day. I told myself have to be patient do not open the wok cover, after 20mins i opened and teng teng teng teng...The cake result was so successful, i'm so proud of myself as i finally able to make the tradition steamed egg cake....This cake nice to serve warm.

I followed the recipe from HeartyBake . My steaming time is 20mins.

Orange Yoghurt Muffin Cake

Can't wait to let it cool, i used fork to cut some of it :oP

This recipe  is adapted from Wendy's blog.

I likes Wendy's cake recipe that bake with oranges. Last time, i'm not fancy with orange cakes. After i tried her recipe with Orange Chiffon Cake, I love it maybe because can taste the pure orange there instead of concentrated orange. The reason I learn to bake orange cake is for my daugh as she can't take fresh oranges due to her permanent cough allergy.

I have been wanted to bake this cake since last few weeks, I took out the printed recipe few times but then either I'm too busy or tired so have to put it back into the file. Finally, i make it today. This cake is really delicious. Thought of give one small cake to my neighbour, after one bite i think i better save it for breakfast :oP. The muffin type one is for my daugh, she wants to bring it to her nursery and share with her friends.

Apricot Yogurt Cake

I saw Wendy's blog posted the Apricot cake which made with yogurt. This recipe is quite easy but i think i measured the amount of yogurt wrongly which maybe caused of the bottom of the cake not cook. The top part of the cake taste good and yummy. Thanks to my little helper, she always exciting whenever see i'm baking because she wants to take part too. Did you realize the little boy standing near the door? Thanks to my neighbour's maid that distracting him if not he will sure wanted to take part too. :O)

Oil less Pandan Chiffon Cake

Oops..should remove the price tag. hehe..

The top part burned cos it touched to the ceiling of the oven.

This cake smell fragrant maybe from the pandan leaves or the coconut milk. It tasted good but a bit sweet for me although I've reduced the amount of sugar from yolk's part. I will reduce the sugar again if i bake next time. And a bit wet also, the texture not similar like the original recipe from wendy. I think i need to practice more :o)

Japanese Cotton Sponge Cake

My ex-col/si-fu Yus asked for the recipe of this cake. She might be kidding cos she is a good baker and good cook. I used to call her si-fu whenever i need her advice on baking trick. I was happy also cos she asked for recipe woh..hehehe..

Ingredients:

60g Butter, melted
80g Plain Flour
80ml Evaporated Milk (I used fresh milk)
1 Egg
5 Egg Yolks
5 Egg Whites
120g Sugar
Pinch of Salt

How to do it:

Add butter and flour together.
Mix till well blended.
Add milk and mix till will combined.
Add the 1 egg and 5 egg yolks till will blended.
In a separate bowl, whisk egg whites till foamy.
Add in sugar and salt and whisk till stiff (takes about 20 minutes)
Using a spatula fold in the egg whites with the egg yolk mixture till well incorporated.
Pour mixture onto the swiss roll pan (15 x 10 x ¼ inches) fully lined with paper.

Bake at 170C on the middle rack for 25 minutes.

Remove the mould immediately when it baked. Set aside to cool.

Note:
When whisking egg white, make sure your tools, bowls are clean and dry. Egg white MUST NOT contain a single drop of egg yolk. If not under these said conditions, your egg white will not peak.
